Going live! Anthony Garlando at Grand Designs Live

Everyone at aqua shard was delighted when our executive chef Anthony Garlando was invited to give a live demonstration at Grand Designs Live. This very popular annual home lifestyle and design exhibition took place from 3-11 May at London’s ExCel, and Anthony was given two slots on the busy final Saturday!

Chef chose to showcase one of the new starters from the recently-launched a la carte menu, Soya caramel-marinated tuna loin with cherry gel. Taking the stage in the impressive Miele Live Kitchen, Anthony first showed the full-house audience how to make the soya caramel and cherry gel, while his chef de partie Alex cubed some very fresh tuna loin.

While dressing the tuna in the soya caramel, Anthony explained how important sustainability is to him, which is why he insists on using fully-traceable line- and pole-caught fish from day boats. He then plated up the dish while the audience watched, adding the cherry gel before sprinkling on crumbled frozen foie gras and adding tiny foraged herbs and edible flowers as a finishing touch.

After the event presenter, who’d been interviewing Anthony about aqua shard throughout the demonstration, had had the first taste, the audience were invited forward to try the finished dish – and from the clean plates and smiling faces we saw, we’d say they were impressed!
